A funny charlotte with tomatoes and yet, we would think a dessert. A recipe that will delight all gourmets!
For 4 people :
- 7 large tomatoes
- 250 g drained thick white cheese
- 4 sheets of gelatin
- 2 tbsp. tomato paste
- 2 tbsp. coffee powdered sugar 2 egg yolks
- 40 cl of fresh cream
- 1 branch of basil to make pretty
Scald 5 tomatoes, peel them, seed them, then cut them into cubes. Reduce the heat for 10 minutes on low heat.
Soften the gelatin in a bowl of water. Drain it and stir in tomatoes, stirring until melted. Pour the mixture into a salad bowl and mix with egg yolks, cottage cheese, tomato paste, sugar and salt. Whip the cream and gently add it to the mixture.
Cut the remaining tomatoes into rings and line them with a 15 cm diameter charlotte pan before filling it with the tomato cream.
Place it in the refrigerator for 2 hours before unmounting the charlotte.
Decorate it with basil leaves.
